Barb’s Beef Fajitas

1 onion, sliced
1 green pepper, sliced
2 tomatoes, sliced
2 tbsp. cooking oil
1/4 tsp. salt (to taste)
1/4 tsp. pepper (to taste)
1 tsp. ground garlic (optional)
12 flour tortillas (7-onch.)
shredded Colby and Monterey Jack cheese (optional)
sour cream (optional)
Trim fat from steak. Cut steak into 6 portions.Marinate steak in Bubbas’ Barbikyu Marinade for at least 2 hours. Cook steak on grill.
Heat oil, and saute the peppers and onions until soft. When almost ready, add tomatoes, garlic, salt and pepper. Avoid over-cooking. Warm up tortillas.
Top with cheese, guacamole, sour cream, and salsa, if desired. Roll up tortillas and enjoy.
